Moments of the Week – #8

my first full week in Cottage Grove – here we go!

 

Kurt and Spencer (l to r) and I took a bike ride on Monday out to the Row River—and of course we brought along Bella! (she’s the black head in the water :)

 

 Bella LOVES to “walk” this way and she keeps an amazing pace the entire time—that dog is so full of energy! I watched her last fall and it was very fun seeing her again: she totally remembered me, too!! :)

 

Not to be outdone, here’s Sophie and I on a walk. She’s such a sweetheart.

 

After seeing a couple recipes at how easy it is to make Almond Milk, I decided to give it a whirl! I soaked 1 cup of almonds and 4 dates in water for about 12 hours.

 

Here’s the result: homemade Almond Milk (just the ingredients above + 4 cups of water)—very awesome and tasty!! :)

 

Having a place like this to walk everyday is really great; this is a bike path in town that winds through woods, a disc golf course, and a regular golf course. It’s so peaceful, and you see quite a few deer, too!

 

I resurrected some dried shitake mushrooms for this one! Just carrots, a can of tomatoes, red pepper, garlic, onion, and italian seasoning, topped with cilantro and avocado—YUM! :)

 

Yeah, it’s pretty awesome to hang out here. You can’t tell from this shot, but the skies in the evening (as the sun sets) are just magical.

 

Many dogs favorite toy: the tennis ball. Sophie is no exception. One can forget how much fun it is to toss a ball to a dog. :)

 

Wow, I had no idea you could get spinach in “brick” form?! I saw a couple packages of this in the freezer and had to see what it looked like. Far from the farmer’s market…. I tossed this into my smoothie!

 

Created a standing desk for myself—outside! The days have been gorgeous and the view is pretty sweet, plus this gives me an easy way to take a break and play with Sophie! Ergonomics + Health + Nature + Productivity = WIN!!

 

Shredded carrot? Nope. Yam rice! After I tried this at Prasad’s , I couldn’t resist making it myself—just threw it raw into a food processor (with a shredding attachment) and voila! I’ve had this in salads and served the tomato soup (above) over it. WOW!

 

I heard rain was coming, and was encouraged to grab as many strawberries from the front gardens I could. Not a bad haul!

 

Rinsed and drying—pretty sweet! These are gonna be great in smoothies, salads, and well…anytime!! :)
