From Escondido to Encinitas to San Diego—here we go!

 

Yes, on a really random note, I did hang out at the Lawrence Welk Resort in Escondido for a couple days. No, I’m too young to really know who he was, but he hosted his for almost 30 years! (Groundhog’s Day fans will enjoy , too!)

 

Part of the Welk grounds—there’s practically a mini-water park at the pool area. As much as I wanted to ride down the waterslide, I just went over for some sun. :)

 

Where do you go for dinner in Escondido? Jimbo’s—naturally!! ;)

 

Dinner at Jimbo’s was pretty awesome: it’s an organic grocery store with a fantastic counter of items: like this jalapeno, mushroom, and onion veggie burger, and a kale, cabbage, and lemon salad!

 

I headed due west and took a drive down the coast; I always love doing these kinds of drives, and this is part of the 101 I’d never been on! This SO reminds me of my trips down the coast in Northern and Central California… just gorgeous!!

 

Stopped by Swami’s Beach to get some sun and shoot a video!

 

While I’m a fan of the beach, I’m not a huge fan of sand in my hair. :) So I brought my trust microfiber towel along for just my noggin’ and it worked out perfect while I caught some rays!

 

Swami’s Beach is popular among surfers and paddleboarders, which I saw a few of that day. Otherwise, it was pretty quiet. A nice way to spend an hour on a Monday afternoon.

 

Then of course I also went to Swami’s Cafe to grab lunch (yellow curry soup and garden fresh salad!!). The name of both the cafe and beach are because of the Self-Realization Fellowship located across the street (the bookstore is on the left in this pic). This is a similar spot to Lake Shrine in Pacific Palisades, which I visited a few weeks ago.

 

Here’s a quick shot of the actual SRF grounds. I love the “walking surfer” sign (right in front of the temple) for drivers to note!

 

My trusty Enterprise steed: only $10/day to grab this sporty Ford Fiesta. Oh yes, I had some fun on the highways… ;)

 

Went to dinner at People’s Organic Food Market (I guess I like eating at stores this week!) in Ocean Beach and had a couple AMAZING plant-based salads (non-dairy and gluten-free): one was “mexican” in flavor and the other kale and golden beet!

 

Ah yes… my couchsurfing companion for a few days: Vanya (or, as you might recognize him: ). Nothing wrong with this kitty—the breed is Sphinx. Just definitely a different kind of cat to be around. Totally loving. :)

 

After my giant avocado score last week, I decided to whip up a batch of the raw avocado cilantro soup I learned about from SunCafe—turned out amazing!!

 

And here’s my host Alex enjoying the soup—he loved it!! :)

 

I kept going with the avocados and made this super simple (and yummy) avocado pudding! Thanks PaleOMG. :)

 

As one might expect, a hairless cat gets cold easier. Here’s Vanya on the stove (!) warming up while Alex boils some eggs—ha!

 

A formidable green smoothie to start the day. Can you handle this? ;)

Awwwww yeah—things just got real.

Real healthy. :)
