Moments of the Week – #6

A bunch of awesome moments from this week!

(have some of your own? to be featured in a future edition of MOW! :)

This is a very food-friendly week of pics: you met get hungry – and inspired!

Cooked up dinner for my friends Brad + Angie: an AMAZING vegan chili (no beans) with red peppers, cauliflower rice, mushrooms, carrots, onion, garlic and jalapeno – it was SPICY, and very tasty. Everything in one pan – super simple – check out the recipe here!

Who needs a gym to do pull-ups?!?!

Tagged along with Brad to an audition up in Volunteer Park – they were looking for people to be goofy and crazy on camera. For a new tablet, Oioo (the joke is getting people to pronounce it). No script. Wasn’t our cup of tea…

Besides, as the saying goes, “never work with animals or children” — how could you compete with those two?! You’ll also notice the Space Needs in the background: it’s painted gold (its original color) to celebrate 50 years!

Brad and I checked out the Grand Army of the Republic cemetery in Capitol Hill, a site with many Civil War veterans and their wives.

At the cemetery: muskets and cannonballs…

A repurposed meal: tossed in some previously-cooked sweet potatoes, regular potatoes, onion and garlic to the salad I made up! Dee-lish!

Very colorful, if I do say so myself: apples, tomatoes, orange, spinach, kale, and avocado!

My first go at cooking brussel sprouts! Turned out pretty well: roasted them in a pan with zucchini, carrots, onion, garlic, mushrooms, vegetable stock and freshly chopped rosemary and oregano!

Lunch at Thrive in Seattle. Brad and I both ordered the Bella Burger – a mushroom/veggie/nut patty with Garlic Cilantro God Sauce and Onion Cashew Cream – O.M.G.! (and yup, the bun is a couple of cabbage leafs – awesome! :)

LOVED Thrive’s menu – it’s a book! Super classy. It has all their cafe items, plus info on their classes, recipes and all the ingredients explained! Way to go, Thrive!! :)

AND Thrive has tons of books, DVDs, appliances, snacks, supplements, and a bulk section! If I lived in Seattle, I might never leave this place… (oh – and they’re a block from the Whole Foods, too!!!) :)

Yes, Brad was quite pleased with his raw lunch. He enjoyed it so much, he said he could have eaten another one!

There were other plans, though: he and I stopped by Healeo for a mid-afternoon snack! He grabbed the Peanut Butter + Cacao smoothie; I ordered the cacao hemp soft serve yogurt with goji berries and wild blueberries (above, with all the toppings you can choose). It was a super food day!

With Brad + Angie at Pizzeria Pulcinella (his: arugula and olive; hers: sausage, prosciutto, and olive; mine: no cheese, arugula and portabellos). I came here last fall with them and the food is amazing! In fact, this place is one of only 400 members of Associazione Verace Pizza Napoletana – a member organization of restaurants who study the method of pizza-making direct from Naples!

And yes, I caved and ordered this amazing dessert (had it last time): Mocha Decadence. Basically, it’s a solid brick of dark chocolate covered with raspberries. So rich and delicious – and flourless! I don’t go crazy too much with desserts, and that made this one all the more worth it!
