The dinner I made:

Veggie Nut Dinner


  • Quinoa
  • Pecans
  • Pumpkin Seeds
  • Celery
  • Mushrooms
  • Onion
  • Garlic

Saute the garlic and onions in a bit of olive oil at low heat. Add the celery, mushrooms, and pecans. Continue cooking on low heat until veggies and nuts are soft. With a few minutes left, add dried oregano. Serve over cooked quinoa with a dash of balsamic vinegar, and garnish with freshly chopped scallions and parsley.
