One of the great joys of my travels is the FOOD, and of course, all the ways people prepare it. There was ovo-lacto vegetarian at Polestar, primal on Kauai, and most recently, raw vegan in Troy, NY!
Yup, the home of Rensselaer Polytechnic Institute and Uncle Sam is where I enjoyed raw meals for 10 days, and two of the people that helped with that were Steph & Bill.
I met Steph through Lisa, my fellow Kauai cohort and also featured in QTw. The two of them have been on a raw food kick since February and creating some amazingly tasty recipes.
On this particular evening, just one of the dishes is featured to the right – raw spaghetti and meatballs! And YES, it was delicious!
