For the recent WDS, I offered to make smoothies for the 16-person suite I was staying in at the Portland Northwest Hostel, and it turns out, there was interest! :)
The full-scale operation required me to wake up at 6 am and blend up smoothies for an hour—and it was FUN!
I even heard from other attendees who wanted in on the AM goodness (next year: commercial kitchen)!
This was the first time I used mint in a smoothie, and it totally worked! I think the potent (and great!) aroma can really help overcome any fear about drinking something green!
I started with a cashew milk base (water, cashews, dates); my recommendation is to soak the dates overnight as they blend up more easily, and when the fruit is re-hydrated, I believe it’s easier for our bodies to break it down and digest. :)
For soaking, you only need enough water to cover the dates, and you can then use that water in the smoothie!
Prep Time: 10 minutes
Makes: 4-5 cups (2 servings)

Ingredients
- 1.5 cups of water
- 1 handful of cashews
- 4-5 dates, soaked overnight and pits removed
- 1 banana
- 4 strawberries
- 2 large handfuls of spinach
- 1 large handful of kale, chopped
- 5-6 leaves of fresh mint
I absolutely think this will appeal to first-time green-smoothie drinkers!
This is a pretty easy way to integrate greens into your morning. It’s still very fruit-based, and the mint will mask any “vegetable” taste (though I’ve always found spinach and kale to be very mild). Thanks to Jodi and Devon for their collaboration on the recipe!
Directions
Add the water, cashews, and banana in the blender and turn it on low.
When everything has blended up, keep the machine running and add the dates, strawberries, spinach, kale, and mint leaves (in sequential order, not all at once), increasing the speed as needed to keep the blending smooth.
Add ice and pulse/blend, or store in the refrigerator. Best served chilled.
Variations:
- for a lighter smoothie, skip the strawberries
- if it’s too sweet, skip the dates (or add more if needed)
